Proper Aging

Wet & Dry Aging Methods, Trends & Benefits

When beef is properly aged it has a deeper richer flavor and increased tenderness. Wet and Dry Aging are the primary methods used today. Wet Aging is performed in a “vacuum sealed” environment for 3-4 weeks. Dry Aging occurs in a highly controlled open air environment for anywhere between  28-50+days.

In wet aging, the meat is placed in vacuum-sealed bags, which prevent moisture from evaporating, and aged under controlled conditions.  The enzymes the break down the meat’s complex proteins from the inside out, producing meat that is more tender with a flavor unique to this process.

Today’s dining trends favor the luxury of Dry Aging – it is an old-world time-honored process which produces the richest meat flavors and textures. Our dry aged beef is laid out on racks in our humidity controlled cooler to age for at least 30 days where the moisture in the meat is allowed to escape.  Evaporation shrinks the beef, concentrating its flavor as it softens the meat. Additionally, the proteins and fats go through a transformation as well through decomposition of enzymes in the meat. Over time, as the beef ages on our racks, it is exposed to air inside the coolers and ages from the outside in, forming a hard curst around the edible tissue.  Once aging is complete, this firm outer crust is carefully removed. The result is superb beef with an extraordinarily rich flavor and buttery texture.

International Meat Company maintains a dedicated Dry Aging Room. Our state-of-the-art aging cooler is monitored for precise temperature, relative humidity and air circulation. We also incorporate specific UV lighting to further ingratiate the process.

Custom Grinding

We offer a variety of premium gourmet burgers made from USDA Choice, Prime, All Natural and Grass Fed beef in a selection of custom blends. Do you have a special ground beef or burger blend? IMC can produce it for you with safety tested raw materials under USDA Inspection. Using our custom grinding operation, you can pick your own custom blend and we’ll produce it for you with the safest state-of-the-art production.

Unique & Custom Specific Portion Cut Products

Do you have a unique portion control cut that sets you apart? Our Master Butchers will work with you to fabricate it for you to your exact specifications under USDA Inspection. We’ll set your unique item up proprietary to your operation and save you the time, labor and energy of your cutting it on your own.

Custom Product Development

Many of our customers have original and different ideas for their menus with limited resources or capacity to make them in-house. Our Corporate Chef and Master Butchers can work with you to develop new products and then produce them for you at our plant. IMC has worked with numerous customers to develop customized items such as marinated beef slices, special cut pork loins, veal short ribs and more.
