We are a custom house in all respects. We work on specifications with each customer. That means when your order hits our cutting room, our butchers are focused on making the product we defined together. Custom grinds and dry age intervals are a matter of course. A pick ticket with your name on it gets filled in a timely manner with the products you have told us you want.
All meats are USDA Inspected and aged in our facility to assure tender, delicious land based protein options for our professional restaurants and your family. Beef, pork, lamb, chicken and game/specialty products are hand selected for each order. Hand packed to insure peak quality at time of delivery.
